I would like to be able to set specific dates on monthly and one-time targets (the date they are due). Not just "monthly" or by a certain month. I would like to see "$50.00 needed by November 17th" for example.

Done! Update to iOS v1.90.0 or visit the web app. You can now set the day of the month your target is due.
The Quick Assign feature will prioritize categories due first instead of the previous way of simply funding top to bottom.
